This is one of the recipes to make at home with our cream ice cream mix: Peach Melba!
Delicious dessert created in London by the French chef Georges Auguste Escoffier. The period is between the 1890s and the early 20th century and the dessert, created in honor of the legendary Australian opera singer Nellie Melba, whom he greatly admires, was immediately a great success.
Composed of a raspberry coulis, ice cream and pieces of peach. I'll list the composition of this delicious dessert or snack, easy to make and sure to be successful:
- At the base, a raspberry coulis, ready in 15 minutes
- Peaches cut into wedges
- Cream ice-cream
You start by preparing the ice cream, emulsifying 100g of cream ice cream mix with 250ml of fresh cream and 1 egg yolk with the help of an electric whisk, for about 5 minutes. The mixture should be poured into a container and placed in the freezer for about 2 hours.
In the meantime, prepare the raspberry coulis: about 300g of fresh raspberries, cooked in a saucepan with 3 tablespoons of sugar and the juice of 1/2 lemon. Bring to the boil maintaining a sustained heat until the raspberries are well cooked and the mixture thickens. Set aside and let cool, until it reaches room temperature.
Clean and cut the peach into wedges. Peaches in syrup are also excellent!
Arrange the raspberry coulis, the peaches, and finally the ice cream in a glass (the eye wants its part!)
The insatiables add whipped cream but it's not essential. The combination of coulis with peaches and ice cream is winning and perfect in its simplicity. And you start thinking about the weekend, the carefree snacks, the days of idleness and regenerating indulgence.
