Preparing the mousse is very quick and easy.


For 6 people you need 250ml of fresh cream and an electric whisk. Pour the mixture and the cream into a bowl. With the aid of an electric whisk, whip the mixture, beating for about 4 or 5 minutes.

Pour into bowls and refrigerate for about an hour. Meanwhile prepare the strawberry coulis.

Necessary: about 12 strawberries, well washed, peeled and cut into small pieces

2 tablespoons of sugar

2 tablespoons of crème de cassis

2 drops of essence of roses for food use


Cook the strawberries over high heat together with the sugar and the crème de cassis, for about 15 minutes, stirring occasionally. When the strawberries are cooked and the mixture has thickened, remove from the heat, add 2 drops of rose essence and mix well. Pass the mixture through a fine mesh strainer, crushing with a spoon. In this way you will separate the strawberry seeds and the coulis will be smooth and homogeneous. Let it reach room temperature and then pour it over the chocolate mousse which is already in the fridge.

Leave in the fridge for a few more minutes before serving, garnishing with a dollop of whipped cream and if you have the opportunity to find untreated roses, arrange a petal for the final touch.
