A fresh salad with bright colors, to be savored taking advantage of the season that offers variety and taste. It takes so little to prepare it that I would not call it a recipe, but rather a suggestion.

The Chèvre cheese slightly inido in the microwave, to make it soft and fragrant, should be placed on a bed of mystique [rocket, valerianella, lettuce, radicchio, dandelion], apple slices, lightly toasted pine nuts, forest strawberries and mint leaves, seasoned with a drop of extra virgin olive oil and balsamic vinegar. All served with a delicious compote prepared with candied strawberries and honey.
